Vinification takes place separately for each variety. After careful selection of the grapes, destemming and crushing is carried out, followed by immediate inoculation with a different strain of saccharomyces for each variety.
Vinification
Matured in French oak barrels for 6 months and 6 months matured in bottles.
Duration
Food pairing: particularly well suited with roast pork, poultry, richly flavoured meat and game dishes. A perfect companion for many savoury dishes and matured cheeses.
